Le lait est ensuite plac\u00e9 dans des cuves, normalement en cuivre, auquel est ajout\u00e9 le levain lactique, \u00e0 raison de 0,5\/1 kg par hectolitre. Nous portons ensuite le tout \u00e0 une temp\u00e9rature de 32\/34 \u00b0C, puis nous ajoutons la pr\u00e9sure obtenue \u00e0 partir du s\u00e9chage des estomacs de veaux n\u2019\u00e9tant plus aliment\u00e9s par du colostrum.<\/p>\n<p>Apr\u00e8s environ 20\/25 minutes de coagulation, la masse g\u00e9latineuse est fendue en granules \u00e0 l\u2019aide d\u2019un instrument appropri\u00e9 appel\u00e9 la lyre (elle tire son nom de l\u2019instrument de musique cher \u00e0 N\u00e9ron).<\/p>\n<p>Les grains obtenus poss\u00e8dent les dimensions d\u2019un grain de riz.<\/p>\n<p>Nous passons ensuite \u00e0 l\u2019\u00e9tape du chauffage au cours de laquelle la temp\u00e9rature de la masse coagul\u00e9e est port\u00e9e \u00e0 44\/46 \u00b0C.<\/p>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t\t\t\t<\/div>\n\t\t","protected":false},"excerpt":{"rendered":"<p>La fili\u00e8re de production Si la technique de production a \u00e9volu\u00e9 depuis lors, elle a maintenu intact le concept de transformation typique de ses origines.
