Precise and well-determined typicality factors should play a major role in the production of quality cheese like Montasio.

The first fundamental factor is the place of origin: Friuli, eastern Veneto in the provinces of Belluno and Treviso and-in part-in those of Padua and Venice.

The second is milk. This depends in large part on the environment, weather and vegetation of the area.

Correct production implies accurate controls on raw materials’ quality and their subsequent processing.

The third is the use of a flexible technology that can please the cheese slow formation process.

The forth is the production labeling of the cheese, which guarantees its origin and the compliance with all the product’s specifications.

Therefore, Montasio is produced today as they used to in the past, in our mountains. Tasty, like it was yesterday. Provided that-obviously-it is the authentic one, with the mark of origin of the Consortium for the Protection of Montasio cheese.

Activities of the Consortium

THE CONSORTIUM IS ACTIVE AT AN INSTITUTIONAL LEVEL (MONITORING OF PRODUCTION AND MARKETING) AND IN THE FIELD OF PROMOTION OF PRODUCTION.

As for the supervision on production, Inspectors of the Consortium have the task of verifying both the quantity produced and qualitative aspects of the production.

Members are required to complete a special register every day. Here are reported different types of data important to assess the quantity of the product and its marketing. In particular, inspectors verify the area of origin of the milk processed into Montasio.

From an institutional point of view, beyond providing continuous assistance, the Consortium monitors processed products, select samples for the assessment of quality parameters and, in general, supervises and coordinates research activities in collaboration with major Authorities and academic institutions in the northeast of Italy.

Moreover, inspectors carry out an important supervisory and control activity on marketing of Montasio aimed to the customer’s protection. In particular, they continuously verify health and safety standards as for the selling of Montasio cheese, the fair use of the mark and correct use of the protected designation of origin.

STRICT CUSTOMER PROTECTION LAWS

Protection of Designation of Origin

(Law 10 April 1954 n.125 and Decree of the President of the Republic of 30 October 1955 n.1269 as subsequently amended).

The use of the name “MONTASIO” is allowed exclusively for cheeses that fulfill specific statutory conditions and quality features and produced in the Friuli Venezia Giulia Region, the whole provinces of Treviso and Belluno and-in part-those of Padua and Venice.

The designation “MONTASIO” was examined in accordance with the provisions of the EC Reg. n. 2081/92 and was found to comply with the regulations established by art. 17 of said regulation, therefore, qualify for the required registration.

Since 12 June 1996, it is registered as a Protected Designation of Origin (P.D.O.) at Community level.

Guarantee of Origin

(Decree of the President of the Republic of 10 March 1986).

The geographic origin of Montasio cheese shall result by the presence of the relevant mark-guarantee of origin-on the heel.

Sanctions against Fraud

(Law 10 April 1954 n.125)
Anyone who sells or trades in another way cheeses labeled as “Montasio”, which do not meet the requirements as defined for the use of said designation, is subject to a term of imprisonment up to one year and to a fine up to LIT. 100,000.

The use and alteration-even partial-of the denomination, by adding terms such as “type”, “flavor”, or similar is fined up to LIT. 50,000.

The same punishments apply if the altered designation of origin-see above-appear on envelopes, packaging, accompanying documents and advertising in general.

Monitoring over Marketing

Monitoring over marketing of Montasio cheese is carried out by means of Supervisory Agents acting as Security Officers employed by the Consortium for the Protection of Montasio Cheese.
